Khao Pad Muo Bau Ga-prow

3 tb Oil
4 oz Pork loin (or other meat)
3 ea Garlic cloves, minced
1/2 c Sliced Thail chilis (or jalapeno peppers)
1/4 c Sliced onions
4 c Cooked rice (Thai jasmine)
1/3 c Fish sauce (nam pla)
2 tb Sugar
1 tb Sweet soy sauce
1/4 ts White pepper
1 c Hot basil leaves
1 sm Tomato, cut into wedges
1/2 c Sliced cucumber
4 ea Green onions/scallions/spring onions, cut in 4-in. lengths
1 ea Carrot, thinly sliced

Heat a large skillet until hot and add the oil. Add the meat, garlic, chilis (or peppers) and onions and cook for 30 seconds. Add the rice, fish sauce, sugar, soy sauce and white pepper and continue to cook until the rice is hot. Toss in the basil leaves and stir to combine. Remove to a serving plate and garnish with tomato, cucumber, carrot and green onions.
