Tropical Fruit Fool

Flesh of one papaya
Flesh of one mango
1 2 cm piece fresh ginger; peeled and finely chopped
2 tb Runny honey
250 ml Double cream

Blend all the ingredients, except the cream, until smooth. Whip the cream to a soft peak and fold in 1/3 of the puree.

Layer into long glasses and serve with crisp biscuits.
